Fryer Maintenance and What You’re Probably Missing

Improper fryer maintenance can cause injuries, poor tasting food, and will shorten the life of your fryer. Follow the steps below to ensure your commercial fryer remains safe and lasts a long time.

Clean the Heating Elements Whenever Oil is Filtered or Changed

– Clean elements, ribbons, and any component submerged in oil
– Use a brush to remove food crumbs and particles from fry pot walls

Clean Fry Baskets Daily

– Remove and scrub. Run through the dishwasher.
– Allow baskets to dry overnight. Even small amounts of water can cause splattering.

Thoroughly Clean Fryer Quarterly

Ideally, hire a professional to clean your fryer. If you choose to clean your fryer on your own, do not use the boil-out technique. Instead, use a white vinegar and warm water combination and scrub with an appropriate brush.

Inspect Annually

Perform an annual inspection based on your fryer’s manufacturer recommendations. Tighten loose fittings and replace worn parts.
