Grease is Gross, so Why Are You Still Dealing With it?
No doubt your commercial grade deep fryer is one of the most important pieces of equipment in your kitchen. People love their fried food, but few consumers of your delicious deep-fried treats have ever had the unfortunate task of maintaining a fryer. Operating a deep fryer means maintenance. At the end of each day, kitchen staff should be wiping down the surface areas of a deep fryer.
They should be focusing on the area around the rim of a fryer vat. This area is where grease droplets tend to form as grease escapes into the air each time the fryer is in use. Overlooking the presence of grease droplets can lead to an unsafe kitchen environment. Grease can and will find its way on to the kitchen floor or counter top surfaces. The fry baskets should get a deep cleaning once a day. Ensuring the baskets are dry before placing them back on the fryer will reduce the risk of injury. Drops of water that fall into the hot oil below the baskets will cause the oil to splatter. This creates the potential for a burn or scarring injury to occur.
Grease Trap Maintenance
Cleaning out the grease trap means removing the dowel inside of the trap that collects the grease. According to the Environmental Protection Agency, you must measure and record how many inches of grease are inside that dowel. The fatty oils and grease (FOG) measurement goes into a record book that the health inspector may check at any time.
You must then properly dispose of the grease. While heavy duty plastic containers may be used, most larger restaurants have bins dedicated to grease disposal. Never pour grease down the sink drain and never toss it in the trash by itself. Grease buildup can damage plumbing when you attempt to rinse it down the drain. It can also come in contact with harmful substances inside the trash, prompting a chemical reaction to occur that can be dangerous to you or anyone that comes near the trash bag as a result.
Dealing with a grease trap is a time consuming, dirty, expensive process to which you must adhere in order to maintain good standing with the health department. Additionally, whenever physically handling grease, risk of injury increases exponentially.
